Their Story

Malia’s was opened in 1987 by Malia Koelker, an Aiken native, serving her mother’s family recipes. Over the years, Malia’s Restaurant became a well-loved downtown institution in Aiken. In August 2025, the restaurant switched ownership to Justin Hayes, but still maintains its commitment to excellence and Malia herself.

Chef Justin Hayes comes from Cork & Flame in Evans, Georgia where he is a partner and former executive chef. His passion for sustainable, balanced and elegantly innovative techniques is brought to life in every dish, especially highlighting his love of wild game and seasonal ingredients.
